With origins in Italy, made for the monks in the 8th century, The Macaron Parisian became popular in France around 1862 and then reinvented by Pastry Chef Pierre Herme in 1980, so called the Picasso of Pastry. He created the unique flavors such as pistachio and rose and the once pale white cookie exploded on the food scene in pastels of pink and green and exotic finishes such as edible gold. Why is the macaron so expensive? The recipe uses only fine ground almond flour (no other flour). Almond flour is expensive however is also gluten free. Macarons are one of the most difficult confections to create. Not only must all ingredients be incorporated precisely but moisture in the air and the exact type of oven and oven conditions (temperature) can make or break a macaron.
